Stovies – a gift from the Gods
I was once in Sainsbury’s at the meat counter and asked what I thought was an innocent question. ‘What meat do you recommend for stovies’. ‘Lamb’ replied the butcher without a second thought. ‘Yes, I began that what…..’ ‘Och, you must be joking’ said an elderly woman to my right. ‘It’s got to be corned beef’. ‘No’ said a professional-looking woman on my left. ‘It has to be sausages. Stovies are made with sausages’. I wondered if she was as dogmatic about other things in her life too. ‘Clockwise…. you must brush your teeth cloakwise’
Diplomatically the butcher tried to bring us all together. ‘Yes, you can make them out of any piece of meat, and obviously people have their favourite, but I think lamb gives it the best texture when cooked and mashed together.’
‘But each to his own’ he added quickly.
‘OK I’ll have 500g of lamb please.’ I said
With that, I made my way down to the vegetable section and then on my way to check out I passed one of the women who had been at the counter. She glanced quickly at me ‘Sausages’ was all she said.
Here is one version below, feel free to do your own thing, the variations are endless.
